This week, our Catering Manager, Mr Prince came support to an extra curricular Food Masterclass to show Year 11 pupils how to bone and fillet a pheasant.
Pupils removed the legs, learning where to split them into a thigh and drumstick and breasts as well as learning to find the scallop on the base of the pheasant (which is a delicacy!)
Mr Prince showed pupils how to season the breast with salt, pepper and herbs and pan fry in butter. The feedback was, ‘very tasty’!
Over the next two weeks, our Year 10 groups will be boning pheasant and making a selection of dishes. Next week, we have a visiting butcher from a local butcher shop supporting the Year 10 pupils. Watch this space for images of the dishes produced!
